Mom’s Carrot Cake with Cream Cheese Frosting

It has been one crazy week!

All started with me catching a throat infection, which obviously then turned into a fever. As soon as I started getting better, our grandma got sick and my recovery went down the drain as I was so worried about her!

Like I said, crazy.

I am finally getting more than three hours of sleep a night after three days and I am sleeping like the dead.

Moist, nutty caramelized notes of brown sugar pair with crunchy walnuts in this classic carrot cake with a cream cheese frosting that is light and creamy- and the perfect amount! No leftover frosting!

Individual Sticky Toffee & Walnut Puddings

With 2018 coming to an end, I decided to throw this year’s healthy mantra away to enjoy these decadent Sticky Toffee & Walnut Puddings!

To be completely honest, this isn’t the first time this year that I’ve enjoyed this particular dessert. A real close friend of mine had chosen this as one of the desserts at a recent wedding. That’s where I was hooked. It is, however, the first time I’m making these at home.

I’ve just got one word for you.


These Sticky Toffee & Walnut Puddings is sweet, the walnuts add a crunchy texture and pair wonderfully with the moist cake giving you a rich dessert!

So I thought long and hard of what I’d want as a first post on my blog. I thought about what all I’ve made recently and then contemplated over some of my more fancier dishes.
