Chili Mushroom & Chicken Lemon Quinoa

I was just playing around with one of the older recipes on my blog seeing how to improve it when I was struck with an idea. Once a week, my husband and I have got to have one of our favorite dishes for lunch- lemon rice with chicken.

It’s something we absolutely must have and deriving the flavors from it, I give you Chili Mushroom & Chicken Lemon Quinoa.

Ingredients
Chicken Marinade
  • 300 gms boneless chicken chopped into large pieces
  • 1/4 tsp minced garlic
  • 1/2 tsp lemon juice freshly squeezed
  • 2 tsp olive oil
  • 1/4 tsp cayenne pepper
  • 1/4 tsp turmeric powder
  • 1/4 tsp ground cumin powder
  • 1/8 tsp salt to taste
Quinoa
  • 1/2 cup cooked quinoa
  • 1 cup water
  • 1 tbsp olive oil
  • 1/2 red onion thinly sliced
  • 1/4 tsp turmeric powder
  • 1 tbsp+ 1 tsp lemon juice freshly squeezed
  • 5 gms unsalted butter
  • 1/2 tsp minced garlic
  • 1/8 tsp red chili flakes
  • 6-8 button mushrooms
  • chopped cilantro to garnish
Instructions
  1. Marinate chicken by mixing all of the marinade ingredients. Refrigerate for at least 30 minutes. If you've got a couple of hours, refrigerate until needed.

  2. Soak quinoa for 20 minutes or according to package instructions. Cook 1/2 cup quinoa in 1 cup water until done- according to the package.

  3. Add butter to a small wok over medium heat, stir until melted. Add the minced garlic and red chili flakes. Stir to combine.

  4. Add the marinated chicken to a medium wok with 1 tsp olive oil and toss, cooking completely. Once cooled, shred chicken and set aside.

  5. Add the button mushrooms and stir fry until softened.

  6. To the same medium wok, add 1 tbsp of olive oil. Add the sliced onions and saute until translucent. Add the turmeric and lemon juice.

  7. Add the quinoa and stir to combine. Mix in the mushrooms and shredded chicken. Top with cilantro. Serve warm.
