Cacao Dates & Nuts Energy Balls

Ingredients
  • 24 dates roughly chopped
  • 5-7 tbsp water
  • 70 gms chopped almonds
  • 70 gms chopped hazelnuts
  • 70 gms chopped walnuts
  • 1 1/2 tbsp cacao powder
  • 1 tbsp cacao nibs
Instructions
  1. To prepare the date paste, add dates and 5 tbsp of the water to a blender and blend until combined. If your dates are a little tough, soaking them in some water beforehand can help soften them.

  2. Open up and scrape down the sides of the blender. If the date paste is still chunky, add 1 tbsp of water and combine. Open, scrape down sides and add another tbsp of water if needed.

  3. Transfer date paste to a large bowl. Add the cacao powder and combine with a spatula.

  4. Chop up the almonds, hazelnuts & walnuts. Add to date paste and fold to combine.

  5. Add cacao nibs and fold.

  6. Using an ice cream scoop, scoop out 12 balls and roll in ground nut flour (almond/hazelnut meal) if you like. Place on parchment paper. Refrigerate to allow them to set before storing in an airtight box.
