A Quinoa Salad. That’s what we’re starting off Break Week with!
Now, this in no way means that I’m going all freakishly healthy on you. Promise.
We’re just getting the healthiest recipe up and out the door so you and I can spend the rest of the week with semi-healthy food.
I mean, a lot of us are spending at the least 11 hours (19 hours at the most in many countries) of the day refraining from food & water, we need at least a little healthy thrown in with yummy.
Ramadan is such a festive time of the year for Muslims. Now, it may be confusing how fasting all day equates to a festive month especially if you throw in the high temperatures into the mix. I just can’t explain it. It’s probably the fact that every little good that you do is so immensely rewarded. Or the fact that we all try to be the very best versions of ourselves for the duration.
Whatever the reason, the underlying feeling is hope.
Something so beautiful, so vital to getting through life. Something so easy to lose.
I have worked on these recipes since last year and perfected them so that you have to spend less time agonizing over what to cook. They are simple, they are straightforward and there is plenty of room for adaptation to suit your/ your family’s tastes. I have kept both adults and kids in mind when planning these recipes, so there’s something for everyone!
Easy Quinoa Salad with Lemon Thyme Dressing
This salad is inspired by one Mom & I had on a recent trip abroad. We had very little time and a lot to do in it, so both of us just grabbed a salad to share from a cafe.
Boy, was that a great idea! And a pretty inspiring lunch!
So this Easy Quinoa salad is super simple. Cooked quinoa and vegetables of your choice are tossed together with a beautiful, light dressing that just ties it all together.
It’s fresh, it’s crunchy, it is delicious!
It is a great lunch option. This Easy Quinoa Salad is also great to have after an entire day of fasting. Quinoa is chock full of proteins, fiber and all things healthy. We all know how great veggies are! Just consider this you reenergizing meal!
You can substitute or add any other vegetables you like. Mushrooms are great in this salad and avocados would add a lovely creamy texture.
It isn’t spicy and it isn’t fried.
It’s a bowl full of wholesome, healthy goodness that I’m sure you’ll love!
Best part? Just grab a spoon and eat it straight outta the fridge.

- 1/3 cup quinoa
- 2/3 cup water
- 2 medium carrots thinly sliced
- 1/2-3/4 of a zucchini chopped
- 1/2 cup chopped broccoli florets
- 1 cucumber chopped
- 3 tbsp chopped sundried tomatoes
- 1 tsp olive oil
- 1/4 cup feta cheese
- 1 tbsp olive oil
- 2 1/2 tsps freshly squeezed lemon juice to taste
- 1/2 tsp honey
- 1/4 tsp dried thyme
Combine the ingredients for the dressing and refrigerate. The flavor is best if it's left to steep for some time. You can start by adding just half the amount of lemon juice if you like. But 2 1/2 tsp is the perfect amount if you ask me.
Soak quinoa in water for 20 minutes or as per the instructions on the package. Cook 1/3 cup quinoa in 2/3 cups water according to the quinoa's package instructions.
Cut all your veggies.
Heat 1 tsp olive oil in a wok and add the zucchini, toss to roast. After 1 minute, add the carrots & broccoli, toss for a minute. Remove from heat.
Combine quinoa and veggies in a large bowl. Add sundried tomatoes and feta cheese.
Pour half the dressing over salad, mix. Add more dressing if needed.
