It has been crazy at home. Crazy!
First, my husband fell sick, got better, then I came down with a light fever & cold and so my dearest decided to fall sick again as well. Just to steal my thunder. He does it every time!

Especially considering what big B-A-B-I-E-S men turn into when they are the tiniest bit under the weather. Am I right, or am I right?
So after 2 days of lying on the couch with my laptop and tv controls, I decided it was enough. If you know me, then you’ll know 2 days of lazing around are just about as much as I can take.
I’m not entirely sure how people spend their days lounging about and well, not really having much of a purpose. I’m just not built for it.
This brownies recipe has been in the family for years. It’s my dad’s favorite recipe which is huge since he isn’t too big a chocolate fan. He absolutely loves these brownies and I used to always whip up a batch before heading over to India for summer vacation for him to enjoy before he joined us.
My favorite brownie is more cakey than fudgy and that’s exactly what this recipe is about. Crispy tops and chewy centers with chopped walnuts.
I do prefer this with dark unsweetened chocolate over semisweet. There’s enough sugar to sweeten it up.
Don’t kill me, but I love milk & brownies and prefer it over milk & cookies. Does anyone relate?

This recipe comes together pretty quickly once you’ve got all the ingredients prepped. After 30 minutes of baking, you have decadent brownies with crispy tops and chewy centers, rich and indulgent- perfect for midnight snacks & brownie sundaes.
It’s a simple recipe that’s so much better than boxed mix brownies and everyone can easily make at home with mainly pantry staples. It’s a recipe you’re going to want to keep close- because who doesn’t love brownies?

- 100 gms unsweetened dark chocolate roughly chopped
- 180 gms unsalted butter
- 350 gms confectioners' sugar
- 4 whole eggs room temperature
- 1 tsp vanilla extract
- 180 gms all purpose flour
- 1 tsp baking powder
- pinch of salt
- 1/4 cup chopped walnuts *optional
Preheat oven to 180ºC/350ºF and grease and line a
Sieve flour into a medium bowl. Add a pinch of salt and baking powder, set aside.
Whisk eggs lightly in a medium bowl and add vanilla extract. Set aside.
Roughly chop chocolate and butter and add to a large heat-proof bowl. Fill a heavy-bottomed saucepan with 2 inches of water and bring to a simmer over medium heat. Place bowl over the saucepan, lower heat and melt chocolate & butter completely, stirring.
Once melted, set aside for 1 minute to cool. Add in confectioners' sugar, a little at a time, and stir to combine with a spatula. Set aside to cool, about 3-4 minutes.
Pour in whisked eggs, and stir until completely combined. Add half of the flour mixture, stir, add in the rest. Stir to a smooth, thick batter and there are streaks of flour left over.
Add chopped walnuts, stir until everything is just combined. Pour batter into prepared pan and slide into the oven for 30-35 minutes or until tops are crisp and a tester inserted into the center comes out clean.
