Are you a breakfast person?
I totally am. Pastries, cereals, eggs, fruits, and juices- I am a big breakfast fan, something my husband totally is not.
That is why this beautiful Lemon Blueberry French Toast Bake was all for myself. A Valentine’s Day treat from me to me.
The card is for my husband.
My thought was that since he doesn’t have breakfast, he could enjoy a sweet note while I enjoyed this beautiful, citrusy breakfast.
Makes sense, right?
Other than the dreamy combination of lemons and blueberries, the best thing about this queenly breakfast is that it can be completely prepared the night before to pop into the oven the next morning. All you’ve gotta do is turn on the oven.
Maybe add some roasted sliced almonds if you’d like the extra crunch.
The blueberry sauce is simple to pull together and can also be prepared the night before.
The bread may look like it’s drowning in the french toast custard, but it absorbs every little drop right up!
There’s just a little something about lemons that I can’t seem to resist. I love adding them to everything- both savory and sweet!
In this french toast, the lemon pairs beautifully with the blueberries and is a deliciously fresh start to any day. Roasted almonds add not only a crunchy texture but lend their nuttiness to complement the tartness of the berries.
It’s the perfect lazy morning breakfast or special breakfast in bed option for any occasion!

A delicious breakfast that can be prepped a day before and requires no hands-on work in the morning! Perfect for Valentines and Mother's Day!
- 2 slices brioche bread *
- 2 eggs
- 1/2 cup milk
- 11/2 tsp lemon zest
- 1 1/2 tbsp freshly squeezed lemon juice
- 2 tbsp honey
- 1 tsp vanilla extract
- 4-5 sliced almonds roasted
- 1/2 cup blueberries
- 1 1/2 tsp lemon juice
- 1 tbsp water
- 1 tsp granulated sugar
Cut bread into cubes and place in baking dish.
Combine eggs, milk, lemon zest & juice, honey, and vanilla together in a bowl. Pour over sliced bread. Cover with aluminum foil and refrigerate.
Slice almonds thinly and roast over a low flame for 2 minutes or roast in oven shaking tray to roast evenly on both sides for 4 minutes. Place in an airtight container and refrigerate until morning.
Combine blueberry sauce ingredients in a small saucepan and cook over low heat until berries burst and sauce thickens.
Take french toast dish and blueberry sauce out of the refrigerator about 15 minutes before baking. Heat oven to 180ºC/350ºF.
Bake for 25 minutes, covering the top with aluminum foil during the last 5 minutes if it begins to brown too quickly. Leave to cool for 5 minutes before pouring sauce over and sprinkling with almonds.
* If bread is fresh, place on rack and bake at 140ºC for 8 minutes on each side. Turn off oven and leave slices of bread in the oven for about a half hour. Slice.
-If brioche isn't available, challah bread is a great option for french toast.
