Baby Spinach & Cherry Salad

I stuck to my healthy eating resolution pretty consistently last year and not only as a goal to meet. I’ve managed to incorporate more healthy food and eating habits into my daily routine.

A fair bit of salad gets consumed at home and although I’ve played around with flavors to an extent, I want to really dive into the salad game this year. Hopefully, that means more salad recipes scattered among the pastas and desserts.

Baby Spinach & Cherry Salad has got roasted walnuts that add a delicious crunch, cherries that  lend their tartness and crumbled feta that's the perfect salty finish. 

Personally, I think salads should have texture. There should be a crunchy component, something nutty, something salty, something sweet.

No, I haven’t gone bonkers. 

I love adding strawberries, like my Fresh Strawberry & Chicken Salad, cherries and pineapples (not in one single salad) for a little sweetness. Crumbled feta is a salt favorite- especially since I’m not a big parmesan fan, although it is always a good option.

Whenever I add some grilled chicken to a salad, it becomes a filling lunch. For a girl who begrudgingly ate salad with a plate full of rice, it’s so satisfying (and astonishing) to have a bowl full of salad and nothing else for a meal.

How do you like salad dressings? Thick and creamy or light and subtle, letting the veggies shine?

Most times a drizzle of olive oil, sprinkle of black pepper and squeeze of lemon juice suits me just fine. But then at times, when I want something a tad more flavorful, then I whip up a zesty hummus/ tahini dressing.

I picked up this pressed olive and fresh lemon salad dressing a year back at a gourmet food store. It’s my favorite dressing- which makes sense considering how much I paid for it!

Baby Spinach & Cherry Salad

Ingredients
  • 1 cup baby spinach
  • 1/2 cup pitted & chopped cherries
  • 1/3 cup chopped roasted walnuts
  • 1/2 cup grilled/baked sliced chicken
  • 1/8 cup feta cheese sliced
  • 1-2 tbsp olive oil dressing
Instructions
  1. Roast walnuts in a small wok/saucepan for 2-3 minutes or until they just begin to turn black. Leave to cool a 2 minutes then chop roughly. 

  2. Slice cooked chicken into desired size. 

  3. Wash and tear spinach into bite sized pieces. Wash, pit and slice cherries. 

  4. In a medium sized bowl, combine baby spinach, cherries, walnuts, chicken and feta. Toss to combine.

  5. Drizzle with olive oil dressing and chill until ready to serve/eat, 

Recipe Notes
  • A simple olive oil dressing would be just olive oil, maybe with the addition of salt & pepper. 
  • You could also add a squeeze of lemon juice to olive oil before drizzling over salad.
