With 2018 coming to an end, I decided to throw this year’s healthy mantra away to enjoy these decadent Sticky Toffee & Walnut Puddings!
To be completely honest, this isn’t the first time this year that I’ve enjoyed this particular dessert. A real close friend of mine had chosen this as one of the desserts at a recent wedding. That’s where I was hooked. It is, however, the first time I’m making these at home.
I’ve just got one word for you.
These Sticky Toffee & Walnut Puddings are sweet- the walnuts add a crunchy texture and pair wonderfully with the moist cake giving you a rich dessert, the perfect end to a light meal- or a short year!
This year flew by much quicker then the twinge of guilt felt when indulging in just a little more dessert.
It was a year of many accomplishments for me in the delicious and completely satisfying world I’ve created through my blog.
I also gained a lot of insight into life. How people twist the actions of a well intentioned person to make it seem terrible. That people will continue to bad mouth you no matter what you do. How working towards your goals and keeping things private can threaten inquisitive people to a new level of jealousy.
There are so many good, kind-hearted people but they are far overshadowed by the rest. To protect your soul, you have to work daily, hourly, to keep your mind at peace and the world from corrupting your inner balance.
Now that is a resolution to work on.
I think Growth would be the best word to describe my year. Personally, physically, mentally and goal wise.

- 1 1/4 / 225 cups / gms chopped fresh dates
- 3/4 cup boiling water
- 1 tsp baking soda
- 75 gms unsalted butter chopped
- 1/2 cup brown sugar
- 2 eggs
- 3/4 cup self raising flour OR
- 1 tsp baking powder
- 3/4 cup all purpose flour
- 1/4 cup chopped walnuts
- 150 gm unsalted butter chopped
- 1 cup single pouring cream
- 1 1/2 cups brown sugar
In a medium bowl, add dates, water & baking soda to soften the dates.
Preheat oven to 160ºC and spray mini bundt cake pan with nonstick baking spray.
Add date-water mixture, butter and sugar to a blender and blend till smooth. Add eggs, one at a time, followed by flour and blend till just combined.
Mix in chopped walnuts by hand.
Pour batter into prepared tin, filling till 3/4 full and bake for about 20 minutes or until a cake tester/skewer comes out clean.
While cakes are baking, make the toffee sauce. add all three ingredients to a saucepan and over medium heat stir to melt sugar. Bring to a boil and cook until thickened, coating the back of a spoon- about 10 minutes. Cool slightly and pour over warm cakes.
-You may not need all the toffee sauce. The longer the cake sits, the more toffee sauce it absorbs. After reheating any leftover cake, pour warmed toffee sauce over cake and enjoy!
