Cinnamon Chip Chocolate Cookies

This Cinnamon Chip Chocolate Cookies recipe has been swirling around my mind for a couple weeks now and after working on it a couple times, I’m sure I’ve got the perfect fall/winter cookie for you!

As far as I can remember, there have always been cookies at home- chocolate chip especially. Or m&m cookies. I don’t think there are many children who don’t enjoy  cookies!

This Cinnamon Chip Chocolate Cookie is thick, it's chewy and it's got the perfect balance of sweet and spice- perfect for cold evenings under warm blankets with mugs of hot cocoa or coffee and a good flick or binge worthy show.

One of my favorite childhood memories from our time in Canada would be coming home from school and plopping down in front of the television for 2 hours. Those entire two hours I would be munching through cookies. No surprise that an entire bag of 2 dozen cookies would disappear within two days.

My mom has got the cutest cookie jar- a snowman’s head and if you lift his tophat, you get all the delicious chocolatey goodness inside. I’ve been trying to mooch that off of her for years, but no dice. You’d think she’d love me enough to hand it over! (ahem, mom!)

The first time I baked chocolate chip cookies at home, it was an enormous achievement. Not because I’d made a batch of delicious cookies but that was the day I found out Dad had always wanted to try freshly baked cookies straight outta the oven. Until today, that is my favorite and most precious moment in all my years of baking.

I have tried so many recipes over the years and finally settled on one that was just the right combination of thick and chewy- in my mind, the perfect cookie!

Not that perfect things can’t be improved upon over time and I’ve used this recipe as a base to make small tweaks as I learn more about the science behind a perfect cookie.

Cinnamon Chip Chocolate Cookies

Ingredients
  • 72 grams all purpose flour
  • 60 grams unsweetened cocoa powder
  • 1/2 cup bread flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 tsp cornstarch
  • 1/2 tsp salt
  • 1/2 ( 115) cup (grams) butter unsalted
  • 1/4 cup white sugar
  • 1/2 cup dark brown sugar
  • 1/2 tsp vanilla extract
  • 3/4 cup hershey's cinnamon chips
Instructions
  1. Heat oven to 180º/356ºF and line a baking sheet with parchment paper.

  2. Whisk together all purpose flour, cocoa powder, bread flour, baking powder, baking soda, cornstarch & salt. Set aside.

  3. In the bowl of a stand mixer, whisk together the butter and both the sugars. until fluffy.

  4. Add the egg and vanilla extract, whisk to combine. 

  5. Add dry ingredients mixture and beat until just combined. 

  6. Sprinkle in the cinnamon chips and mix with a spatula until well distributed. 

  7. Form cookie dough into balls, about 1 tbsp big, and set on baking sheet. Pop into the fridge for 5 minutes if the dough is very sticky. After 5 minutes, remove from fridge and slide into oven to bake for 8-10 minutes or until cookies are puffy and look to be set. They will still be soft until they cool down. 

  8. Leave to cool completely. Store in airtight container and refrigerate.
