Happy World Pasta Day! I’ve got a beautiful, flavor packed pasta that’s got my Roasted Red Pepper Pesto singing delightful notes of its sweet smokiness paired with fresh cherry tomatoes, chilli garlic mushrooms and fresh basil just waiting to transport your taste buds into pasta filled heaven. But before we get onto that, I’ve got a question..
Today was one of those walking leisurely hand-in-hand kinda days, ending with a good hour spent at a bookstore, so I’d say the best way to end it would be with some delicious pasta and a romantic setting.
Since I’m going to have to forego making this flavorful pasta for hubs and me since we’re still out of town, I’m going to ask you to put it together for us.
Make it, enjoy it and have a couple bites for us!
Hubs and I share a lot of things in common, but we’ve got a lot of differences too. The biggest one would probably be my love for most food and his love for just a handful of his favourites. However, one of our greatest shared loves is that for books- while mine range from cookbooks to romance novels and thrillers, his span all things business, media and knowledge books (what are they called?) in general. Sometimes, having this in common is a pitfall, especially when we come across a great bookstore while travelling. One of us has got to hold back so we don’t end up leaving all our clothes and belongings behind just to take the books home.
Yes, it’s that bad.
I’ve partially solved the problem by having a Kindle and no longer buying novels unless they are Nora Roberts’ books- I’m working on owning her entire collection one day. So I just buy cookbooks and hubby buys out the entire business section.
I know a Kindle just isn’t the same as actually holding a novel and devouring it, but travel baggage limitations aside, I just couldn’t keep buying novels and filling up our bookshelves. There are just so many wonderful books to read that I could not wrap my head around so much paper just sitting around at home if I didn’t pick up a story for a couple years to reread. When on a Kindle, well, there’s no actual paper being used, right?
So, my question.
What’s your guilty pleasure? Do you share it with your significant other or is it just something you enjoy on your own?

And while you think of what you and your bae have in common, just put together this Red Pepper Pesto Tagliatelle with Mushrooms because then you can sit with them and enjoy a beautiful meal while you celebrate the fact that you love them because of all the differences!

- 4 oz pasta
- 1 tbsp olive oil
- 2 cloves garlic, small thinly sliced
- 1 cup sliced mushrooms
- 1 tsp red chili flakes
- 6-7 cherry tomatoes halved
- 4 tbsp red pepper pesto
- basil to garnish
- parmesan to garnish
Cook pasta according to instructions until al dente. Drain and set aside.
Add olive oil to a large wok over medium heat. Add sliced garlic and red chilli flakes, mix. Add sliced mushrooms and saute until soft about 4-5 minutes. The mushrooms will release some moisture, so do not add any extra oil.
Add halved cherry tomatoes and let cook for a minute until they just begin to soften.
Turn heat to low and add red pepper pesto and stir to combine. Add the pasta, a little at a time, and toss to coat pasta with sauce. Remove from heat.
Add chopped fresh basil leaves and grated Parmesan cheese. Serve hot.
