Happy Canada Day!
This day brings back so many wonderful memories for me!
Spreading out a blanket in Chinguacousy Park with my family and watching the amazing fireworks display was always the highlight!
One of the most spectacular fireworks show I’ve seen was at that park!
They say you can spend your whole life in one place and never truly feel at home. Over a decade later, sitting at home in a small town in India, I miss Canada like a lost limb. Even after being born in this country, I will forever be the weird girl from abroad since I never grew up here. Something I don’t think I will ever regret.
Moving countries throughout your childhood actually gives you a kind of freedom, because you’re never actually from anywhere specific. You’re made up of parts of different cultures and countries, you’ve got empty spaces from the people you’ve left behind and an understanding of the world not many people get from spending their whole life in one place.
You can travel the world as a tourist, but unless you’ve actually lived in a place for a period of time and interacted with its people, you can’t really understand life in that country. You can dream of it and hear about it, but you can never know.
Ah, moving on..
To celebrate this great day, I made these delicious chocolate cakey mini donuts that are just so good, I can’t seem to put them down and I made 6 dozen of them!
They just take 7-8 minutes to bake, a few minutes to dunk into icing and a couple more to set and voilà!
So, so good that I’m just waiting to finish this post to grab some more and stuff my face.

Baked Mini Chocolate Donuts
Recipe adapted from hellocreativefamily.com
Yield: 6 dozen mini donuts
1 1/4 cup+ 1 tbsp. all purpose flour
3 tbsps. cornflour
1 1/2 cups cake flour
1 cup caster sugar
1/2 cup dark cocoa powder
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
2 large eggs
1/2 cup buttermilk*
1/4 cup vegetable oil
1/4 cup strong coffee
*No buttermilk? No, problemo! Just remove 1 tbsp. of milk from the 1/2 cup measured and pour in lemon juice! No need to let it stand, give it a stir and as soon as it starts to become chunky, a minute or so, pour it in!
1 3/4 cup red candy melts
1 cup white chocolate
1 tsp shortening, divided in 1/2 tsps. each
- Spray donut pan with baking spray or grease with vegetable oil. Set aside. Preheat oven to 180ºC.
- In a large bowl of a stand mixer, add the flour cocoa powder, sugar, baking soda and powder and salt and mix on low until combined.
- Add the eggs, mixing after each addition. Add the buttermilk, vegetable oil and coffee. Mix on medium speed until combined. Do not over beat.
- Spoon into donut pan, only filling until halfway- about 2 tsps. Pop into the oven and bake for about 7 minutes. Should spring back when touched- let them cool for two minutes.
- Melt the candy melts with 1/2 tsp of shortening each in separate bowls. Red candy melts+ 1/2 tsp shortening and white chocolate+1/2 tsp shortening. In 30 second intervals- Keep stirring. Keep in mind that white chocolate’s texture tends to change quickly if overheated, so keep stirring it.
- Carefully run a knife along the edges of the donut, it should pop out. Turn over and dunk into the red candy melts, place on a cooling rack. Finish dunking a batch in red candy melts. Stir white chocolate and using a spoon, just flick it over the donuts to cover as much as you like.
- Store in an airtight container at room temperature for 3-5 days.
