Another Middle Eastern dish to add to your cooking tool belt!
This is the most healthy, easy to make soup that I have ever tried.
I’m not even kidding in the slightest!
A light, delectable soup that is fresh and healthy all within 40 minutes!
I dunno about you guys but this just seems so much more nutritious than those instant soup packets you find at grocery stores. I know I usually feel like having those when I fall really sick, all the while knowing that it probably isn’t very good for me!
Who knows how long they’ve been sitting in our pantries and before that at the store?
Speaking of stores, I took my nieces on a grocery run with me this morning and the littlest one discovered a box of Oreo Cereal, much to her excitement! When she got home, she showed that box to everyone who walked into the door all day!
I find it just adorable and fascinating about what excites children at their different ages!
And then near the checkout, we found this roll of HubbaBubba gum! Which was exciting for us all, cause my grandma used to buy those for me all the time when I was a little girl! Who hasn’t enjoyed at least one roll of that strawberry flavored gum, the taste of which disappears within minutes?
Anyhow, say you decide to make this Shorba. You’ve sautéed the onions and garlic, added the rest of the ingredients and closed the pressure cooker. You could slice up a baguette and toast it to make some bruschetta. By the time you’ve chopped the tomatoes, added the basil & garlic, popped it into the oven and it is halfway toasted- the chicken and oats would have finished cooking.
Open that pressure cooker, check to see if it has cooked, add the seasonings and cook for a couple minutes. Bruschetta is ready to be taken out of the oven, Shorba is ready to be ladled into a bowl- you are all set!

- 1 tbsp olive oil
- 1 medium red onion thinly sliced
- 1 tsp garlic paste
- 1 large tomato chopped
- 1 tsp whole cumin seeds
- 1/2 cup rolled oats
- 300 gms boneless chicken breasts cut into bite sized pieces
- 1/2 tsp black pepper
- salt to taste
- 4 cups water
- 1 chicken stock cube
- 5-6 coriander leaves chopped
Heat the 1 tbsp. of olive oil in a pressure cooker. Sauté the onions until translucent and soft. Add garlic paste, sauté until aromatic.
Add the oats, chicken, cumin seeds, chopped tomatoes and water- bring to a boil, then close the pressure cooker and cook until tender- about 5-8 minutes.
Open the pressure cooker, check if oats are mushy and chicken is tender. Break the chicken stock cube and add along with salt & pepper, and cook for 2-4 minutes to let the spices combine and stock cube has dissolved. Turn off flame, add chopped coriander leaves and serve hot.
